Zeeb Bees

Raw wildflower honey from our hives in Dexter, Michigan.

About

We're a small, local beekeeping operation. Our bees forage on the wildflowers around Dexter near the Huron River, and we extract and bottle the honey ourselves in small batches.

It's raw, meaning that it is never heated or filtered more than needed to keep all the natural flavor. The taste shifts a little with the seasons, because it depends on what is blooming.

Raw honey FAQ

What does "raw honey" mean?

Raw honey is taken from the hive, strained to remove bits of wax and debris, and jarred without being pasteurized. It’s never heated beyond the natural warmth of the hive. “Raw” has no single legal definition in the U.S., so we’re happy to tell you exactly how ours is handled.

Why is it called "wildflower" honey?

Our bees forage on whatever is blooming near the hives, so the flavor comes from a mix of flowers. Color and taste shift from season to season and batch to batch. That variation is a sign of honey made by bees, not blended in a factory.

Why is my honey cloudy, thick, or turning solid?

That’s crystallization, and it’s completely natural. It happens to all real honey, and more often with raw honey because nothing has been done to prevent it. Crystallized honey isn’t spoiled or fake, and it’s still good to eat. Some people spread it like butter on toast.

How do I turn crystallized honey back to liquid?

Set the jar, lid loosened, in a bowl of warm water (about 100–110°F) and stir occasionally until the crystals dissolve, usually 20–40 minutes. Skip the microwave and boiling water. High heat dulls the flavor and can crack the glass.

How should I store it?

Keep it at room temperature in a cupboard, away from sun and heat, with the lid tightly closed. Don’t refrigerate it, since cold speeds up crystallization. Always use a clean, dry spoon.

Is raw honey safe for everyone?

Never give honey, raw or otherwise, to babies under 12 months old. It can carry botulism spores that an infant’s digestive system can’t handle. It’s fine for older children and adults. If you have pollen or bee allergies, check with your doctor first.
